Sour cherries are the key to this gin & tonic recipe. Their season is fleeting so hit your farmers’ markets now to scoop up the last of the harvest. If you’ve never had sour cherries before, they truly are the most sensational cherry. They are bright red in color, rounder and softer than sweet cherries and definitely more acidic. To me, they are the best (and only) pie cherry to use, bringing an intense cherry-berry flavor. Since I love infusions, it felt like they were the right fruit to add to gin for a take on my favorite summer drink— the gin & tonic. The following recipe is simple, it does take some advance planning, but the results are a showstopper. Happy Summer!

This recipe makes enough for an entire 750ml bottle of gin but feel free to cut it in half or thirds.
