August is hot and humid in NYC. Luckily tomatoes and stone fruits are at their peak, and so there’s really no need to look much further. These juicy orbs are my predominant source of nutrients until the beginning of October. And corn! Of course we can’t forget corn, which also goes beautifully in this salad. If I’m not eating Ganbara’s Tomato Salad, or a tomato sandwich on grilled bread with aquafaba aioli and basil, I’m diving into this Savory Fruit Salad. It’s so refreshing on hot days, comes together in minutes, and can even sit out for awhile and keep its original form. Its exact ingredients ebb and flow with what I find at the farmers market each week. Get to your local market, treat yourself to the summer bounty around you, and enjoy these last moments of juicy freshness!
