PS. The energy bites below are a favorite any time treat but particularly good pre-, during or post- work out. In combination, the ingredients support energy, brain function, gut health, circulation, hydration, and help in the reduction of inflammation. Bonus: they are delicious.
Energy Bites
Don’t worry about making all the balls the exact same size. It’s nice to have some larger ones and some smaller ones.
Makes 24
1 cup raw cashews
½ cup old-fashioned rolled oats
¼ teaspoon himalayan pink salt
1 cup (16) deglet noor dates
¼ cup dried cranberries
¼ cup dried blueberries
¼ cup dried cherries
2 tablespoons pea protein powder
2 tablespoons maca powder
1 tablespoon pomegranate juice powder
1 tablespoon beet root powder
1 tablespoon ground flax seeds
1 tablespoon chia seeds
2 tablespoons blue agave nectar
In the bowl of a food processor, blend cashews, oats and salt until very finely ground. Add dates, cranberries, blueberries and cherries and blend until very finely ground. Add remaining powders and seeds and blend well to combine and until mixture starts to clump together slightly. Add agave nectar and blend until mixture starts to come together. Press mixture together with your fingers- it should hold together. If it seems too dry to hold together, blend in another tablespoon of agave nectar.
Roll mixture into 24 balls (each a little larger than 1 inch in diameter). Refrigerate for up to 1 month.
